Easter is just around the corner, and what better way to make Easter better than to add even more sugary treats! There are many desserts you can make that are Easter themed!
One of the desserts you could make are cookie dough pops (pictured to the left). The ingredients you will need are: 1 cup all-purpose flour, ½ cup of unsalted butter melted, ⅓ cup of packed brown sugar, 1 teaspoon of vanilla extract, ¼ teaspoon kosher salt, 1 tablespoon of milk, ½ cup of chocolate chips. For decorating, you will need 2 pounds of white chocolate and ¼ cup coconut oil, as well as sanding sugar, marshmallows, m&ms, and whatever else you think will work or want! To begin cooking your first step is to preheat the oven to 350F. Then, on a rimmed baking sheet, spread the floor on to an even level, and let that bake for 10 minutes. Then, using an electric mixer, mix the butter and sugar until completely combined. For step three, add salt, vanilla, flour, and milk. Then, slowly add the chocolate chips! Now, the steps for decorating! You will work with smaller batches to make the coating. Take eight ounces at a time and 1 tbsp of coconut oil, then put them into the microwave for 30 seconds. After they are done, you will put them into the popsicle mold. They will then sit in the refrigerator for 5 minutes or until firm. Push a stick into mold and slowly add more chocolate. Fill each mold with cookie dough. Leave a gap between dough and top of the mold. Then, redo these steps until you have 16 popsicles and decorate!

Another tasty treat you can make is lemon curd egg cookies! The ingredients you will need are: 1 batch basic sugar cookie dough, 1 tbsp. finely grated lemon zest, 1 2-inch egg cookie cutter, 1 ½-in. round cookie cutter. 1/2 cup (1 stick) unsalted butter, at room temp, 2 cup confectioners' sugar, plus more for dusting, 1 teaspoon. pure vanilla extract, pinch salt, and 1 11- to 12-ounce jar lemon curd. Now, you will add lemon zest to the butter and floor to get the dough ready. Use an egg cutter that is floured. Next, use a round cutter to cut the center out and bake. Next, prepare the buttercream. Use an electric mixer to beat butter and confectioners’ sugar until stiff. Then, add vanilla and salt to the mixture. Spread all the none-hole cookies out and top them with the part of the cookie that was cut out. Fill each hole with the lemon curd that was made. You can add sugar to finish it off.
