May 15th is one of the sweetest days of the year! Here are four recipes to help celebrate Chocolate Chip Day. The full recipes with measurements can be found at the bottom of this article!
Chocolate Chip Banana Bread:
This is a delicious twist on classic banana bread, because chocolate makes everything better! This quick bread recipe is easy to make and only has a few simple ingredients. You’ll need softened butter, granulated sugar, eggs, ripe bananas, vanilla extract, flour, baking soda, salt, and chocolate chips. First, make sure to preheat your oven to 350°F, and grease and flour your baking pan (9x5x3 is recommended). Next, cream the butter and sugar together in a mixing bowl and add the eggs. Mash the bananas until they’re a smooth consistency, and add them to the mixing bowl with the vanilla. While the wet ingredients are mixing, start whisking together your dry ingredients: flour, baking soda, and salt. Combine all ingredients into the mixing bowl until everything is incorporated. Fold in the chocolate chips, pour the batter into your prepared pan, and sprinkle some more chocolate chips on top! Place the baking pan into the oven and bake for about an hour, or until a toothpick comes out clean. Give your bread some time to rest before removing from the pan, and enjoy!
Cannoli Dip:
Cannoli dip is a quick, no bake treat that can be served with chocolate chip cookies, graham crackers, or broken waffle cone pieces! For this dessert dip, you’ll need mascarpone cheese, ricotta cheese, powdered sugar, vanilla and almond extract, mini chocolate chips, and cookies, crackers, or cones for dipping. Start by combining the cheeses, extracts, and powdered sugar in a mixing bowl. Whip the mixture for about 5 minutes or until it’s thick and fluffy. Once everything is combined, fold in the chocolate chips and sprinkle more on top. Let the dip set in the fridge for about an hour and serve!
Baked Banana and Chocolate Chip French Toast:
If you thought French toast couldn’t get any easier, then maybe you’ve never tried baking it! All the ingredients are mixed and layered in a casserole dish and baked to sweet, toasty perfection. Even better, this recipe can be made the night before! You’ll need bread (cinnamon swirl or brioche works best), bananas, chocolate chips, eggs, milk, butter, and vanilla extract. You’ll also need oatmeal, butter, and brown sugar for a crumble on top. Start by greasing your casserole dish with either butter or cooking oil. Place a layer of bread slices in the bottom of the dish, followed by a layer of sliced bananas and chocolate chips. Repeat this process two more times, and make sure to end with a layer of bread on top. In a large bowl, whisk together the eggs, milk, melted butter, and vanilla. Slowly pour the mixture over the bread layers, coating each slice evenly. In a small bowl, combine the ingredients for the crumble topping and mix into clumps with your fingers. Sprinkle the topping onto the bread, wrap the whole casserole tightly in plastic wrap, and refrigerate overnight. When you’re ready to bake, preheat the oven to 350℉ and remove the plastic wrap from the casserole dish. Let the casserole come to room temperature (about half an hour) and bake uncovered for 35-45 minutes or until the top is golden brown. Let the French toast cool/set for 5 minutes before serving.
Fudgy Raspberry Brownies:
These light, chocolatey brownies are the perfect sweet treat! Even better, they’re made with raspberries and lemon zest for a fresh combination of flavors. For this recipe, you’ll need unsweetened chocolate, butter, pastry flour, unsweetened cocoa powder, salt, eggs and egg whites (and a lot of them!), light brown sugar, unsweetened applesauce, canola oil, vanilla extract, chocolate chips, frozen raspberries, and chocolate and lemon zest for the top. Preheat your oven to 350 °F and grease your pan with nonstick cooking spray. Next, put the chocolate and butter in a microwave safe bowl and heat in 30 second intervals until the mixture is melted and smooth. In another bowl, whisk the flour, cocoa powder, and salt together. In a large mixing bowl (either a hand-held or stand mixer), beat the egg whites, eggs, and brown sugar until fluffy. Add the applesauce, oil, and vanilla, and beat until blended. Then, add in the melted chocolate/butter mixture and beat again. Fold in the flour mixture until just moistened, then fold in the chocolate chips and raspberries. Pour the batter into your prepared pan and make sure it’s spread evenly. Bake the brownies for 20-25 minutes and let them cool on a wire rack. When you’re ready to serve, sprinkle the top with grated chocolate and lemon zest, and cut into bars. Enjoy!
