It’s Christmas season, and this means it's time to start thinking about what desserts you are going to bring to your family gathering! Not to worry because I have five great recipes that are guaranteed to wow your family.
Peppermint Bark
50 minutes, 12 servings
Ingredients
12 oz. semisweet chocolate, chopped
12 oz. white chocolate, chopped
1/2 tsp. peppermint extract
8 candy canes, crushed
Directions
Put down parchment paper on a baking sheet. Fill a large pot 3 inches high and let it go to a simmer. Then reduce the heat to low and put a bowl on top of it in the water. Add semi sweet chocolate and stir until it is completely melted. Then pour the chocolate onto the parchment paper and spread it out. Then refrigerate for 20 minutes.
Then put a second bowl in the water that is still simmering and add the white chocolate. Stir until melted. Pour that over the chocolate on the baking sheet and then immediately add the crushed candy canes immediately after.
Peanut Butter Snowballs
35 minutes, serves 12
Ingredients
2 c. powdered sugar
1 1/3 c. creamy peanut butter
1/4 c. butter, melted
2/3 c. graham crackers crumbs
1 tbsp. maple syrup
1 tsp. kosher salt
2 c. white chocolate, melted
2 tsp. coconut oil
Sprinkles, for garnish
Directions
Place a wire cooling rack down.
In a large large mixing bowl combine powdered sugar, peanut butter, butter, graham cracker crumbs, maple syrup, and salt. Use a whisk or hand mixer to combine the ingredients.
Using a small cookie scoop, form the mixture into balls and place on a baking sheet.
In a medium bowl, melt the white chocolate and coconut oil and mix until smooth.
Dip the peanut butter balls into the white chocolate and put on cooling rack.
Top with sprinkles and then cool for 10 minutes.
Sugar Cookie Truffles
45 minutes, serves 15
Ingredients:
15 baked sugar cookies
1 (8-oz.) block cream cheese, softened to room temperature
1 tsp. pure vanilla extract
Pinch kosher salt
2 tsp. coconut oil
1 1/4 c. white chocolate chips
Christmas sprinkles, for garnish
Directions:
Line a baking sheet with Parchment paper
In a food processor, blend the cookies until sandy.
In a large bowl, stir to combine crushed cookies, cream cheese, vanilla, and salt.
Using a small cookie scoop, form cookie mixtures into small balls and place on a cookie sheet. Continue this process until all of the mixture is gone, and place in the freezer until all of the mixture is gone.
Meanwhile, mix the coconut oil with the white chocolate chips and put it in the microwave for 30 seconds, or until melted.
When the balls are finally chilled dip them in the chocolate and put them back on the cookie sheet.
Decorate with Christmas sprinkles and then put in the fridge to chill for 10 more minutes.
Peanut Butter Blossom
20 minutes, serves 30
Ingredients:
1 3/4 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. kosher salt
1/2 c. butter, softened
1/2 c. smooth peanut butter
1/2 c. packed brown sugar
1/4 c. granulated sugar, plus more for rolling
1 egg
2 tbsp. milk
1 tsp. pure vanilla extract
Hershey Kisses
Directions:
Preheat the oven to 375 degrees and line two large baking sheets with parchment paper.
In a small bowl, whisk flour, baking soda, and salt until combined.
In a large bowl mix butter and peanut butter together until smooth. Add sugar and mix until the color becomes lighter. Then add in the eggs and milk. Follow up with the flour and combine until combined.
Take a tablespoon of cookie dough and mix it with the sugar and put it onto a pan. Repeat this process with the remaining cookies.
Bake for 8 to ten minutes and then let cool.
Immediately top with a Hershey kiss, let cool, and then serve.
Christmas Light Cupcakes
30 minutes, serves 12
Ingredients:
devil’s food cake mix
1 c. water
1/3 c. vegetable oil
3 large eggs
3 c. Heavy cream, whipped
16 oz. cream cheese, room temperature
2 c. granulated sugar
2 tsp. vanilla extract
1/4 tsp. salt
Black decorating gel
Mini M&M
Directions:
Line a muffin tin with liners.
Make the chocolate cupcakes following the directions on the box.
In a large bowl, beat heavy cream. In another bowl combine cream cheese, sugar, vanilla, and salt until light and fluffy. Gently fold in whipped cream. Transfer to a large ziploc bag.
Frost the cupcakes. Trace a black line around the cupcakes with decorating gel and stick the M&M’s.
