Blueberry Shortcakes

Blueberry shortcakes are a quick 30-minute recipe to make that everyone will enjoy! The main ingredients are 1 cup of flour, ⅔ cup of sugar, 1 ½ teaspoons of baking powder, ¼ teaspoon salt, ½ teaspoon of vanilla extract, ⅓ cup softened butter, ½ cup of milk, 1 egg, and of course ¾ a cup of blueberries. Some toppings that could be added are lemon zest, lemon glaze, more blueberries, or even whipped cream! This recipe size will serve six, so adjust to make enough for everyone! Make sure the oven is preheated to 350 degrees Fahrenheit!


After preheating the oven to 350, make sure the pan is covered in baking spray. Then add flour and shake it around, and get rid of excess flour. Next you will be whisking the flour, baking powder, sugar, and salt in a bowl. Then add vanilla, softened butter, milk and eggs. Mix all in an electric mixer on medium for two minutes. Then mix in the blueberries. Finally, pour in the batter, filling the cavities halfway, and bake for 18 to 20 minutes.


Spring-Inside Spring Cupcakes!

This recipe will make 24 cupcakes. For the cupcakes you will need: 3 ¾ cups of cake flour, 1 tablespoon of baking powder, ½ tablespoon of salt, 6 room temperature eggs, 1 ½ cups unsalted butter, 2 ½ cups sugar, 1 ½ cup of milk, 2 teaspoons of vanilla extract, and 1 bag of vanilla cupcake M&Ms. For the frosting, the ingredients needed will be: 1 cup of softened, unsalted butter, 4 cups confectioner’s sugar, ½ teaspoon vanilla extract, 3-4 tablespoons of milk, pink food coloring, and last but not least sprinkles!


First preheat the oven to 350 degrees Fahrenheit. In a big bowl, whisk the flour, baking powder, and salt. Using an electric mixer, mix butter, sugar and vanilla at a medium speed until it is very light and fluffy. Next, eggs will be added to the sugar. Make sure to mix well. Once the eggs are mixed into the mixture, you will need to add the dry items. Make sure to add the milk as well. Once this is done, put it into a cupcake sheet and this will bake at 350 for 16-20 minutes. While the cupcakes cook/cool prepare the frosting.


Butter will be mixed first until it is fluffy. When the butter is fluffy, return the mixer to a low speed and begin to add the powdered sugar. Then, once the powdered sugar is added and mixed, add the vanilla, salt, milk, as well as the food coloring. To put the M&Ms in the cupcakes use a piercing knife and put them in. Then, enjoy!
