On January 7th, the National Calendar recognizes National Tempura Day.
Tempura originates from Japan and is used to bread and fry certain dishes. The
most common dish that is used with tempura is shrimp. It is also common with
other seafood dishes such as lobster and fish. The batter is made with 1 quart of
vegetable oil, ⅛ a teaspoon of baking soda, ½ a teaspoon of kosher salt, ¼ a cup
of cornstarch, ¾ a cup of rice flour, 1 large egg yolk, and 1 cup of ice cold
sparkling water. This recipe should make 4 servings and can be doubled
dependent on your meal. The use of tempura is a great substitute to the traditions
of heavily frying and will create crispy dishes with less calories.
