November is the time of classic fall desserts! Thanksgiving is approaching fast, and, although juicy turkeys and creamy mashed potatoes are vital, Thanksgiving isn’t complete without a trip to the dessert table! From the staple pumpkin cheesecake roll, to the warming brown betty crisp, Thanksgiving brings many delicious desserts to choose from. With Thanksgiving coming up so soon, it’s time to warm those ovens and start the holiday season with a bake off!
Pumpkin Cheesecake Roll

Time to make: 1 hour
Serves: 8-10
INGREDIENTS:
FOR THE CAKE
Cooking spray
1 c. granulated sugar
3/4 c. all-purpose flour
1/2 tsp. kosher salt
1 tsp. baking soda
1/2 tsp. pumpkin spice
3 large eggs
2/3 c. pumpkin puree
Powdered sugar (for rolling)
FOR THE FILLING
12 oz. cream cheese, softened
1 tbsp. melted butter
1 tsp. pure vanilla extract
1 1/4 c. powdered sugar
1/2 tsp. kosher salt
DIRECTIONS:
Preheat oven to 350°.
Line a 15” x 10” jelly roll pan with parchment and grease with cooking spray.
In a bowl, combine the sugar, flour, salt, baking soda, pumpkin spice, eggs, and pumpkin puree.
Spread into prepared pan and bake.
Lay out a towel on your counter (try to use one with little to no texture) and dust with powdered sugar.
When cake is done baking, flip onto kitchen towel and gently peel off parchment paper.
Gently but tightly roll cake into a log. Let cool completely.
Meanwhile, make the filling: combine cream cheese, melted butter, vanilla, powdered sugar, and salt. Whip until smooth.
When cake is cooled, gently unroll and spread with cream cheese filling. Roll back up and dust with more powdered sugar.
Serve.
Brown Betty Crisp

Time to make: 1 hour and 20 minutes
Serves: 8
INGREDIENTS:
5 large slices country bread, torn into large pieces
6 tbsp. melted butter📷
1 tbsp. granulated sugar
5 large apples, peeled and sliced
Juice of ½ lemon
3/4 packed light brown sugar
2 tsp. ground cinnamon
1/2 tsp. kosher salt
Vanilla ice cream (for serving)
DIRECTIONS:
Preheat oven to 375°. In the bowl of a food processor, process bread until coarse crumbs form. Transfer to a large baking sheet and spread into an even layer. Toast until golden, 5 to 7 minutes.
When bread crumbs are toasted, transfer to a bowl and mix with melted butter and granulated sugar.
Toss apples with lemon juice. In a separate bowl, stir to combine brown sugar, cinnamon, and salt.
Assemble: Add half the apples to the bottom of a large baking dish. Top with an even layer of 1/2 the brown sugar mixture and and 1/2 the bread crumbs. Repeat, using remaining ingredients.
Cover dish with foil and bake for 40 minutes.
Remove foil and bake until bread crumbs are golden and apples are tender, 8 to 10 minutes more.
Serve hot with ice cream.
